Ruth's Kabocha Kupcakes


2 cups kabocha squash, cooked until soft and mashed
1 1/2 cup sugar or less
4 eggs
3/4 cup oil
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoon baking soda
1 teaspoon cinnamon

Mix together pumpkin, sugar, eggs, and oil. Sift flour, salt, baking powder, baking soda and cinnamon then add the pumpkin mixture. Mix well. Put in cupcake papers and bake at 350 degrees F. for 20-30 min. Cool and add frosting, optional.

We served these at the Landisdale Fall Festival and many requests were given for the recipe so here it is.
